Recently I've been asked both by local galleries and artists to help them come up with foraged and creative cocktails for openings. As an artist myself, I think of these drinks as collaborations.
The one in the picture above is from Canadian artist Emma Brack's opening at Lynx last Friday. She wanted something using pitaya (dragonfruit), which grow on certain night blooming cacti. The fruit itself is very mild, kind of like a less sour kiwi.
To give the drink depth and a color reminiscent of nighttime, I used a syrup based on pu erh (fermented and aged Chinese tea). Orange peel and lemon gave brightness and the wild texture was achieved using pureed pitaya. Since the drinks were served outside in winter, no ice was needed. Delicious!
